Tsuji Jerky was born in professional kitchens. Executive Chef Jason Tsuji spent more than twenty years in restaurant kitchens — including high-end Japanese omakase sushi — learning how to coax deep, clean flavor from great fish.
He set out to fix what bothered him about snacking: jerky meant heavy red meat and a mountain of sodium. So he made a better one.

We start with quality salmon and a marinade you'd recognize from a Japanese kitchen — sake, mirin, soy, honey, kelp, ginger and garlic. Then we slow-dry it until tender and umami-rich. That's it.
